Always hungry never full

Food, food, food glorious scrumptious food. It’s a good thing I am writing this post with dinner cooking cause the devil is a liar. My time line is full of pictures of food and I can’t take it anymore.

One of my all time favorite meals is mupunga unedovi neka road runner (peanut butter rice served with the free spirit chicken aka free range chicken) I don’t know why we call it “road runner” but I just know you should only attempt to catch it if you have long legs lool cause that thing can run and fly even.

You know the saying “running around like a headless chicken”? I am pretty sure they meant that chicken cause if you slaughter the head off and make the mistake of not having a firm grip on it, you might as well not consider a career in slaughtering chickens cause you will be in for it. It’s the funniest thing really cause there it is headless, running in all directions with absolutely no coordination. (sorry vegetarians must be gruesome reading that)

But once it’s in the pot, cooking under low heat with tomatoes and onions only with NO funny stew mixes added… sigh… Thank you Jesus for food! The reason why stew mixes should never and I repeat never added to this chicken is because it excretes some delicious juices during the cooking process and that’s where all the succulent flavour is.

Had I put more thought into this I would have prepared my own and used that pic instead sorry 🙂 I just can’t seem to find one with the chicken

The chicken paired with peanut butter rice is divine. Peanut butter rice is so easy to cook and delicious. I like mine creamy so I always add a bit more water so that when it’s simmering it doesn’t harden.

It’s a body warmer meal that’s perfect for winter. And if I plate this up for you please don’t expect the rice to be shaped like a heart, ain’t no-body got time for that when the aromas alone make your taste buds salivate. Heck I am salivating just thinking about this meal.

Your hands are the weapons of mass destruction, it’s messy, it’s not pretty but it is oh so worth it 🙂

    In Uganda my tribe is synonymous with peanut butter and in all modesty we eat it almost with anything, be it rice, potatoes, bread, honey etc but the idea of making rice with it has for some unknown reason never has never occured to us so earlier on when I read this and shared with my brother we had a good laugh about how a whole tribe of more than five-hundred thousand people has never really thought cooking rice with peanut butter. Anyways great article, this has been an insightful piece!!

      HHHWWAAAAAAAAAT? That is so funny looool! I am shocked you have never tried peanut butter in rice considering today almost all the meals I have been reading about had peanut butter in them, fish even. I don’t know how you do it, I can only have so much of it I don’t even put it on bread just rice and porridge and that’s it.
